Broad beans, also known as fava beans, have been enjoyed since ancient times, with origins tracing back to the Mediterranean and Southwest Asia. They have a firm, starchy texture when raw, turning creamy and nutty when cooked, with a slightly earthy undertone.
Rich in plant-based protein and folate, broad beans support muscle growth and red blood cell production. They also contain levodopa (L-dopa), a compound linked to dopamine production, which may aid brain function and mood regulation.
Barry’s tips: For a vibrant side dish, blanch and peel young broad beans, then toss them with olive oil, lemon zest, and pecorino cheese. Older beans work well in soups and stews, adding hearty texture and flavour.
