Choy sum, known for its tender stems and small yellow flowers, has a mildly bitter taste that softens beautifully when cooked. Originating in China, it’s frequently used in stir-fries, soups, and dumplings, where its flavour melds seamlessly with other ingredients.
Rich in vitamin A, choy sum promotes eye health and contributes to skin regeneration. It is also packed with calcium, which supports bone health, and iron, which helps prevent iron-deficiency anaemia.
Barry’s tips: Stir-fry choy sum with sliced mushrooms, garlic, and a dash of soy sauce for an easy, nutritious side dish. Alternatively, steam it lightly and serve with a ginger and sesame dressing for a fresh, flavourful salad.
